How to Clean an Ice Machine

A few important notes:

  1. Do NOT mix your cleaning solution and your sanitizers together (Per Federal Statute) . Read all labels before use.
  2. DO wear protective gear when cleaning. (Rubber gloves & safety goggles or face shield)
  3. NEVER use anything to force ice off of the evaporator, otherwise you may damage your equipment.
  4. Do NOT use cleaners containing abrasives, such as, chlorine, citrus, steel wool, etc. on the exterior of the equipment.
  5. DO follow the instructions of your factory manual or you may damage your equipment and void your warranty.

Okay, now on to the ice machine cleaning.

As discussed in our previous post, ice machines should be deep cleaned at MINIMUM every six months, but more often than not, it is necessary to clean more frequently than that.

If you are an owner/operator that has the time and are willing to clean your ice machine yourself, we have included some basic instructions below on how to clean an ice machine.

Step 1:

Turn your equipment off.

You can either wait until just after the ice has dropped off of the evaporator – or – you can turn the machine off or wait for the ice to melt off the evaporator. (Please remember note #3 above)

Step 2:

Remove all ice from the storage bin.

Step 3:

Press the switch or button for “clean”. Once the water has flown through the dump valve and drained, the water trough will refill and the display should indicate that it is time to add cleaner.

Step 4:

Add the proper amount of approved cleaner per the manufacturer’s manual and allow the cycle to complete. Usually takes anywhere from 20 to 30 minutes.

Step 5:

Sanitize the equipment by taking out any removable parts from the ice machine (carefully follow instructions from your manual for disassembly).

Create the appropriate solution-to-water mixture and use a soft brush, cloth, or sponge to clean all parts. You can use this solution to clean the ice tray, dispenser, or any other foodservice related parts.

Step 6:

Rinse all areas with clean water to ensure no residue from your sanitizer or cleaner remains in the ice machine.

Quick Tip: Discard the first two batches of ice post-cleaning.

Step 7:

Clean the exterior by wiping the surface wtih a cloth to remove dust or dirt. If the exterior remains greasy, use a mild dish soap and water solution to wipe down, then dry with a clean, soft towel. (Please remember note #4 above)

It is highly recommended to hire a professional service agent to perform deep cleanings on your ice machine equipment. Any subsequent issues that occur after cleaning yourself may cause damage and totally void your warranty. Professional technicians are properly trained and certified to ensure the equipment is thoroughly cleaned and properly reassembled.
